Happy National Bavarian Cream Pie Day!<br />

For those of you in need of a refresher, Bavarian cream is any chilled dessert consisting of custard, whipped cream, gelatin and a variety of flavorings, from chocolate, to fruit or liqueurs. Although custard and gelatins have become somewhat outdated over time -- gone is the heyday of <a target="_blank" href="http://brands.kraftfoods.com/jello/explore/history/">Jello</a> -- they've remained dulcet comfort foods and potluck classics. <br />
<br />
May we remind you of at 1930s ad campaign for Jello, shortly after their chocolate pudding was introduced, a key ingredient in many a Bavarian cream pie:<br />
<p><strong>"Jack:</strong> So Mary, why is JELL-O(R) like a boy just before Christmas?"</p>
<p><strong>"Mary:</strong> Because it's twice as good as ever before, Jack!"</p>
And while the novelty of easy gelatin cooking may have worn off, the flavorsome dessert has withstood the test of time.<br />

You feasted on turkey yesterday -- and might be doing so for the next week if your leftovers are particularly abundant. While the flavors of the Thanksgiving spread are delightful, after a few days you may find your taste buds tiring of turkey sandwiches and reheated leftovers of the same dishes. Why not reimagine your leftovers by adding different flavors altogether? <br />
<br />
That's exactly what Elana's Pantry did. Her <a target="_blank" href="http://www.elanaspantry.com/turkey-chili/">Turkey Chili </a>recipe is a simple, fuss-free concoction, combining typical Thanksgiving leftovers (turkey, carrots, onion and broth) with roasted poblano peppers, cumin and oregano with some zingy fresh cilantro. An added bonus for post-Thanksgiving bloated bellies: the flavorful, brothy serving will satisfy without stuffing.<br />

On Thanksgiving, it's easy to overlook the main event for all the delicious sides. But with <a href="http://www.flickr.com/photos/coconutrecipes/4079067185/">a turkey</a> like this one, it's hard to deny the glory of such a proud bird.<br />
<br />
Though many lust after a particular side dish, a turkey this juicy and golden reigns over any Thanksgiving table. As first-time Thanksgiving hosts know, it can be both the centerpiece and the biggest concern. (Ever see the deflated bird in National Lampoon's <a href="http://www.youtube.com/watch?v=Spmqbs8YCW8">Christmas Vacation</a>? If only the Griswolds had tried our <a href="http://www.slashfood.com/2009/11/11/turkey-brining-101-how-to-brine-that-bird/">brine</a> recipe.) As with many of one's favorite foods, a love affair with stuffing may have been sparked by a simple product served during your formative years, like Kraft's <a target="_blank" href="http://brands.kraftfoods.com/stovetop/">Stove Top Stuffing</a>. And although this author's food knowledge and repertoire have since expanded significantly, the adaptable base is still a viable option today -- with all the preparations a Thanksgiving meal entails, why not cut some corners when possible?<br />
<br />
The base -- adapted by Recipezaar with a make-at-home <a target="_blank" href="http://www.recipezaar.com/Krafts-Stove-Top-Stuffing-Mix-Clone-183313">clone recipe</a> -- is extremely versatile, flavored only by chicken bouillon, parsley, celery and onion powder. But to many, this is its beauty -- it's infinitely adaptable. It can be kept simple, but is open to taste preferences -- saut&eacute;e, say, a generous amount of onions, garlic, leeks, carrots and portobella mushrooms to make the dish extra hearty and satisfying.<br />

Happy National Parfait Day!<br />
<br />
Although I'm not proud to admit my initial exposure to any food was at a fast-food chain, my first memory of the parfait involves those creamy -- though perhaps closer to pasty than luscious -- plastic-cupped "<a href="http://www.kfc.com/menu/desserts_parfaits.asp">Little Bucket Parfaits</a>" at the Colonel's KFC. My childhood self was delighted by the layered varieties, gleeful with the prospect of crumbled cookies awaiting at the bottom. (It runs in the family: My father is so notorious for his love for the British trifle -- which is differentiated by its inclusion of ladyfingers -- that, at my sister's wedding in the British countryside, her husband's mother presented my father with a bowl of it as an edible good-natured gesture.)<br />

Whether your Thanksgiving celebration errs on the Puritanical side, with extended family and tykes on the loose, or functions as more of a boozy bacchanal, this "<a href="http://www.ezrapoundcake.com/archives/4857" target="_blank">Southern Comfort Barn Burner</a>" cocktail should provide ample comfort to imbibers of all sorts.<br />
<br />
If our <a target="_blank" href="http://www.slashfood.com/2009/11/23/thanksgiving-wine-pairings/">Thanksgiving wine pairings</a> didn't quite satisfy your thirst, Ezra Pound Cake's simple Southern Comfort and cider concoction will certainly fit the bill. In what she dubs "the official drink of Thanksgiving 2009," Ezra spikes some classic apple cider with some Southern Comfort, seasons it with cinnamon and brightens it with fresh lemon. She summarized the elegant drink best in her blog: "The combination works because the flavors in Southern Comfort -- especially the peach, orange and cinnamon -- dance with the apple in the cider, giving you a drink that's sweet and fruity, with an undercurrent of trouble. Just like Thanksgiving." We'll drink to that!<br />

Said actor and writer <a href="http://www.museum.tv/eotvsection.php?entrycode=bennettalan" target="_blank">Alan Bennett</a>, "Life is like a box of sardines, and everyone is looking for the key." Alas, when it comes to the slippery fish, not everyone is interested in opening up that can. And it seems foodies have a love-hate relationship with the chow. <br />
<br />
Even adventurous eater and ex-New York Times food critic <a href="http://dinersjournal.blogs.nytimes.com/author/frank-bruni/" target="_blank">Frank Bruni</a> was under fire for rumors that he <a href="http://newyork.grubstreet.com/2009/08/breaking_scandal_does_frank_br.html" target="_blank">hated sardines</a>. After further research on his praise for various plates of the dish, the final verdict was best summed up in his own words: "Sardines aren't for sissies." <br />

We love giving the extra nod to seasonal cooking by serving dishes in an edible container, be it stuffed <a href="http://www.slashfood.com/2009/11/06/stuffed-carnivale-squash-feast-your-eyes/" target="_blank">squash</a>, tomatoes, bell peppers, or, in this case, an artichoke. Not only is the result visually pleasing, but its flavor benefits from added depth and complexity.  <br />
<br />
In the pictured <a target="_blank" href="http://www.eddybles.com/walnut-bacon-rice-artichokes/">Walnut, Bacon and Rice-Stuffed Artichoke</a>, the Eddybles blogger saut&eacute;ed a base of onion, garlic and double-smoked bacon with tomatoes and lemon juice before adding rice, Parmesan and basil. But, as she writes, the dish is in fact a "two chapter meal." After enjoying the warmed salad, you reach the meaty artichoke petals, saturated with the drippings of the saut&eacute;e. The best part is thus saved for last, when you deconstruct the artichoke bowl and savor the richness of each seasoned petal.<br />

The tangy sweet berry has come a long way from being used by Native Americans as a dye or by sailors as a vitamin C fix to fight scurvy. As American as apple pie, the cranberry is one of only three fruits native to North America (with counterparts blueberries and Conchord grapes) and, naturally has been intrinsically linked to Thanksgiving, which today is just three days away.<br />

Happy National Carbonated Beverage with Caffeine Day! Red-lentil soup inspired my love of the brothy dish, both for its natural flavor and for its unparalleled comforting qualities -- in fact, so much so that my house has become known among friends as the "Soup Kitchen," and friends will randomly text while in the neighborhood to ask what's cooking.<br />
<br />
I discovered red-lentil soup rather late in life, during my college years, at <a href="http://chicago.metromix.com/restaurants/mediterranean/sultans-market-bucktown-wicker-park/143854/content" target="blank">Sultan's Market</a>, a small but fiercely beloved Mediterranean spot in Chicago's Wicker Park. Braving the bristly winter weather with a bowl of the soup to-go made my walk home doable, whatever obstacles the weather was throwing my way (and these usually included numbingly harsh winds). <br />
<br />
And coming home to a spicy bowl of this stuff warmed was inevitably a body- and soul-warming experience. Although I'm fond of preserving the natural flavor of the red lentil by cooking it up in a soup with sparing ingredients (namely broth, garlic, onion and a touch of cumin), you can't go wrong with hardly any variety of the ultimate soothing concoction. Blogger Whitney in Chicago makes hers with red pepper flakes and chipotle, ups the heartiness factor with the addition of rice, and artfully tops it all off with slivered almond and zesty Feta. You should try her recipe -- I wholeheartedly back her in dubbing it a surefire "<a target="_blank" href="http://whitneyinchicago.wordpress.com/2009/11/12/redlentilsoup/">cure for darkness</a>." <br />

Happy National Vichyssoise Day!<br />

We'll take cue from a master, and agree with Julia Child that the traditional leek-and-potato vichyssoise "is the mother of the family in all her simplicity." The vegetables combine to a delicate smooth soup, and, wrote Child, "a bit of cream at the end is a nourishing touch, but by no means necessary." But dear Julia, since when were you one to go easy on the fat? <br />
<br />
Created by the chef of New York's Ritz, Louis Diat, the soup made an appearance shortly after the restaurant opened in December 1910. Debatably a Franco-American hybrid, the soup was inspired by the cooking of Diat's mother: "One of my earliest food memories is of my mother's good leek and potato soup," he wrote. Although similar French potage recipes predate the chilled Vichyssoise as we know it, the temperature is what differentiates the refreshing dish.<br />

It's amazing what a base of flour and water is capable of. Though breads often take a back seat, as accompaniments to main courses, cheeses or more, today we celebrate bread worthy of standing on its own, the ultimate mobile comfort food -- not to over-toot the French, but gloriously buttery croissants and crunchy, subtly salty baguettes spring to mind.<br />
